Gnocchionara - classic carbonara with gnocchi

Gnocchianara

Imagine a classic carbonara, but with gnocchi instead of spaghetti! Here is a simple recipe that can easily be used on a mountain or forest hike with the family. Recipe by the well-known Swedish chef and hiking enthusiast Pontus Karén!

What you need:

For 4 people you need:

  • 1 piece of hot-smoked pork (approx. 150g)
  • 1 packet of gnocchi
  • 1 yellow onion
  • 5 dl cooking cream
  • 1 piece of parmesan
  • Fresh parsley
  • 1 teaspoon of salt
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder

Instructions:

  1. Cut the pork into small cubes and roughly chop the onion.
  2. Brown the tenderloin in a frying pan in a storm kitchen.
  3. When the pork is crispy, lift the pork out of the frying pan.
  4. Fry the onion together with the gnocchi in the fat from the pork for about 3 minutes.
  5. Season with salt, thyme and onion powder.
  6. Pour over the cooking cream and pull the cream from the outer edge of the frying pan inwards towards the center repeatedly until the cream begins to thicken.
  7. Place the Gnocchionara on four plates, garnish with chopped parsley.
  8. Serve!
